Pre-COVID there was a 24 hour IHOP that I found had an electrical outlet under the booth in the back of the establishment. Perfect place to hide and hookup the laptop and could even charge it while I was there if need be.

I always order and not just coffee. Like a full on meal and I let them know that I'm working while I eat and make sure I leave a decent tip to compensate for my warming the seat.
